Why We Serve Breadfruit This Way

Most places that serve roasted breadfruit scrape it, peel it, and slice it until you can't tell it was ever roasted over fire. We do the opposite. At Yelluh Meat, we eat it straight out of the charred shell, the way you'd eat it standing at a fire pit. That's the whole idea behind the Breadfruit Bowl, and it's not a gimmick, it's how we actually think breadfruit should be eaten.

The Bujol Bowl: Where It All Started

Before Yelluh Meat had signature bowls, before there was even a Build-Yuh-Own menu, there was Bujol. It's a traditional Bajan dish that's long served as a saltfish-based (salted cod) alternative for people who don't eat souse, made with cucumbers, sweet peppers, onions, parsley, lime juice, salt, and tomatoes, mixed fresh. Some households pickled other types of fish or chicken instead, but Bujol was always the most popular version of that tradition. It's the very first way we ever served roasted breadfruit, and it's the dish everything else on our menu grew out of.

Where the Toppings Tradition Comes From

Long before Yelluh Meat existed, communities across Barbados had their own way of doing this: cut the heart out of a whole breadfruit before roasting, and stuff it with ketchup, pepper sauce, and whatever meat the household had. Different parishes did it differently. Some used tuna. Some used sardine. Some used salt beef or salt meat. Our toppings are our own version of that same island tradition.

The Pickled Pigtail Bowl

This one draws from two different Bajan traditions at once. The first is souse, a national delicacy: pork cooked in a lemon salt brine with cucumber, onion, and parsley, traditionally served on Saturdays with a slice of boiled breadfruit and steamed sweet potato pudding. The second is barbecued pigtail, its own separate street-food tradition, sold pre-cooked and grilled. We didn't want to recreate either one wholesale, so our Pickled Pigtail Bowl takes fully trimmed, cooked pigtail and prepares it pickle-style on top of the bowl, a nod to both traditions without copying either one.

What's Actually Made From Scratch

A few things we make in-house that most places selling similar food would buy frozen or pre-made:
• Every breadfruit is locally sourced: homegrown from trees in communities across the island, not imported or commercially farmed.
• Our pepper sauce is mango-based, made from scratch.
• Our Smoked BBQ Pigtail gets seasoned twice: a dry rub before it goes on the grill, then finished with our scratch-made Barbecue Rum Sauce, made to order.
• Our breadfruit tacos are made directly from breadfruit, not flour tortillas or pre-packaged shells.
• Our ground provision nachos are made from scratch: carrot-sweet-potato chips, breadfruit chips, and plantain chips.

De' OG Saltfish Gravy Bowl: A Nod to Granny's Cooking

This one is personal. Dwight's mom and grandmother used to cook a middle-cut saltfish gravy for his dad: breadfruit steamed or boiled, then sliced, with saltfish gravy poured over it, sometimes with steamed okra and pear (avocado) on the side, or just a dash of hot sauce when there wasn't anything else to add. De' OG Saltfish Gravy Bowl is our way of bringing that same nostalgic, granny-style flavor to the table. It's a different dish and a different story from Bujol, but it comes from just as real a place.

What Regulars Actually Order

Ask around and you'll hear the same handful of names come up again and again: Meat Lovers, De' OG Saltfish Gravy, Smoked BBQ Pigtail. If anything sells out first on a busy Saturday, it's usually the Breadfruit Bowl base itself, especially the Regular size, before any single topping runs out.
