About the Role
The Kitchen Lead is the operational backbone of Yelluh Meat’s Back-of-House. This role ensures smooth, efficient, and consistent kitchen performance across prep, service, and close. The Kitchen Lead is a working leader, hands-on with food production, safety checks, and quality control, while also managing team rhythm, equipment care, and communication with leadership.
Responsibilities
Operational Excellence
Oversee daily prep, cooking, and service line performance.
Maintain recipe accuracy, portion control, and presentation standards.
Lead opening and closing kitchen procedures, ensuring full checklist compliance.
Team Leadership & Training
Train and guide cooks, ensuring adherence to food safety and quality standards.
Lead pre-shift briefs and post-service debriefs.
Foster a clean, efficient, and respectful kitchen culture.
Inventory & Cost Control
Manage weekly inventory counts, waste logs, and storage systems.
Work with Directors to maintain food cost targets and reduce spoilage.
Communicate supply needs and track deliveries.
Safety & Compliance
Enforce all food safety, temperature, and sanitation standards.
Maintain accurate HACCP and temperature logs daily.
Support equipment upkeep and maintenance schedules.
Results
Line checks completed before every service.
Waste ≤ 2%; Food cost within budgeted variance.
Ticket time ≤ 10 minutes during peak service.
100% compliance on food safety logs and kitchen checklists.
Positive leadership feedback from team and FOH coordination.
Requirements
Experienced in fast-paced kitchens (3+ years).
A natural leader with strong follow-through.
