In this role, you’ll prep and portion with precision, work clean and fast on the line, and handle live fire to roast breadfruit—the heart of our menu. You’ll rotate stock, record waste, and support your teammates to keep the kitchen running smoothly, even during a rush. It’s hot, smoky, and intense—but if you take pride in doing real work with real flavour, this is the role for you.


This isn’t a “helper” role.


You are the cook. You’re expected to show up ready to own your station, manage your time, and hold the standard with the rest of the team. If you respect the hustle, love working with your hands, and thrive in a kitchen where tradition meets pace—this is where you belong.

Responsibilities

  • Roast whole breadfruit over open wood fire—monitoring, rotating, and finishing to standard.

  • Prep ingredients and assemble dishes to exact specifications

  • Follow proper food handling, hygiene, and safety procedures at all times

  • Maintain a clean, organized, and well-stocked station throughout service

  • Label and store ingredients using FIFO and rotation standards

  • Record prep output, cooking waste, and plating waste daily

  • Communicate clearly with kitchen teammates to coordinate timing and workflow

  • Restock items, report low supplies, and assist with inventory when needed

  • Complete assigned cleaning and closing tasks as per kitchen checklist


Results

  • All breadfruit is roasted to spec, safely and consistently, using live fire.

  • All menu items are prepared consistently to standard recipes and portion specs.

  • Service times are met consistently during each shift.

  • Prep sheets and kitchen checklists are completed on time.

  • FIFO is followed for all stock storage and rotation

  • All prep, cooking, and plating waste is recorded accurately.

  • Workstation is maintained to cleanliness and safety standards at all times.

  • Prep is complete and station is ready before each service window.

Requirements

You’re steady, reliable, and detail-driven. You’re focused, like to work with your hands, move with purpose, and are physically ready to handle the demands of kitchen work.

  • Comfortable working around open fire, smoke, and high temperatures for extended periods.

  • Able to manage the physical demands of outdoor/partially open kitchen work (heat, lifting, standing).

  • 1+ year of kitchen experience preferred—or fast, focused learners with persistence.

  • Strong attention to detail—especially with food quality, cleanliness, and portioning.

  • Understands and follows food safety, sanitisation, and proper kitchen hygiene practices.

  • Can handle pressure, communicate well, and stay focused during busy service.

  • Physically capable of standing for long periods and lifting up to 50 lbs.

  • Works well independently and as part of a fast-moving kitchen team.

  • Brings a can-do attitude—even when it’s hot, loud, and hectic.

  • A genuine respect for ingredients, systems, and Bajan culinary traditions.

  • Respectful of tradition and passionate about delivering consistent, quality food.

  • Positive, solution-oriented mindset—you don’t wait to be told what needs doing.
